An Introductory Tour of Mozilla's XUL by Nigel McFarlane, author of Rapid Application Development with Mozilla, provides a great foundation for XUL, explaining what it is and what it does and giving you some example sof how to make things work.
Mozilla Overlays: A New Way to Combine XML Documents, by Nigel McFarlane, is a fascinating look at a more complex problem solved by XUL. What do you do if XML information is split across several documents? Documents written in Mozilla's XUL dialect of XML can be merged automatically into a single, final document using a system called overlays, and Nigel explains them in this article.
Smoke, Mirrors and Silence: The Browser Wars Reignite, also by Nigel McFarlane, explains why XUL may matter more than you think.

Enterprise J2ME: Developing Mobile Java Applications by Michael Juntao Yuan (Prentice Hall PTR, 2003, ISBN 0-13-140530-6) isn't actually about XUL, but it does describe coding for an environment in which XUL can be used. (Buy this book) (Preview this book on Safari)
Amazon Hacks, by Paul Bausch (O'Reilly, 2003, ISBN 0-596-00542-3) has a terrific hack that involves requesting a set of information from Amazon, translating it into RDF, and using XUL to automatically display it. (Preview this link on Safari)
References and Implementations
XUL is part of the Mozilla Project, so of course the best place to get an XUL implementation is in the Mozilla browser or it's commercial counterpart, Netscape. In terms of documentation, check out XUL Planet for a ton of fantastic resources, including a quick and an item-by-item tutorial.
